Profitt Report: Make your sweetheart a chef-approved, romantic meal at home

Our holiday that celebrates love can be pretty un-loving to your wallet. The National Retail Federation says we will spend $143.56 on Valentine’s Day this year and 55 percent of the the U.S. population will celebrate. Most of that money is going toward jewelry, but an evening out is the second biggest spending category.

Choosing to cook at home will do three things said Chef Brad Valley of Saginaw County: save you some money, you'll beat the crowds and win some major brownie points! Valley suggests trying something a little out of your comfort zone, but not so complex that you feel overwhelmed: this should be fun. Here are directions of rolled flank steak and lemon garlic shrimp linguine, courtesy of Valley:

Rolled flank steak

Ingredients:

  • 2-pound flank steak
  • 1 red pepper
  • 1 yellow pepper
  • 1 orange pepper
  • 6 slices provolone
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire
  • 2 tablespoon steak seasoning (Montréal steak seasoning)
  • Butchers twine or cotton twine

Directions:

Slice flank steak in half, slice peppers thin. Opening flank steak, add soy sauce, Worcestershire and olive oil. Rub into steak. Season with steak seasoning. Layer provolone on steak and then begin laying peppers. Roll stake into a cylinder and tie with butcher twin. Sear in a hot pan until browned on all sides. Place in a 350-degree oven until internal temperature reaches a minimum of 145 degrees.

Lemon garlic shrimp linguine

Ingredients:

  • Raw shrimp 26/30
  • 1 pound linguine
  • 1 lemon
  • 4 garlic cloves, diced
  • 2 tablespoons olive oil
  • 2 tablespoons butter

Directions:

Cook pasta about 80 percent, reserve a few tablespoons of pasta water. In a sauté pan, heat oil over medium high heat. Add garlic and cook for two to four minutes until garlic is soft. Add shrimp and pasta with two tablespoons pasta water. Cook until shrimp is done. Add butter, saute until butter is fully incorporated.

We tallied the numbers: the flank steak will cost you about $34, the shrimp linguine roughly $21. That's feeding two people with plenty of leftovers!
