Recipe: Crab Cakes and Crab Stuffed Mushrooms

      Brad shows us some very, very good crab cakes and crab stuffed mushrooms

      Chef Brad Valley is showing us some fantastic dishes based around crab.

      First we have Crab Stuffed Mushrooms and then we have a recipe for crab cakes!

      Ingredients:20mushrooms1/2lemon, juiced2 cups water1/4 cup minced onions1/4 cup minced celery1-1/2 teaspoons sour cream1/4 cup softened cream cheese1 tablespoon bread crumbs1/2 teaspoon lemon fresh juice1/8 teaspoon garlic powder. Add an additional 1/8 teaspoon fresh garlic if you love garlic!!1/8 teaspoon salt1/8 teaspoon pepper1/4 cup crabmeat1/8 cup olive oil


      Preheat oven to 350 degrees F.Wipe the mushrooms with a lightly damp paper towel. Remove stems saving about half of them discard the rest. Mince stemsand set aside. Place mushroom caps in a large bowl. Add the olive oil making sure all the mushrooms are coated. Add lemonjuice and toss.You may use a blender or food processor, making sure not to over mix. Mix just enough to combine. Thoroughly mix the onions,celery, sour cream, cream cheese, bread crumbs, lemon juice, garlic powder and salt. Transfer the mixture to a medium bowland gently mix in the crabmeat by hand.Fill the mushroom caps with the mixture.Bake in the preheated oven 7 to 10 minutes, until lightly brown* You may also top with cheese of your choice. Shredded parmesan works well** You can substitute the crab meat with Italian sausage if you donâ??t like sea food


      Ingredients:1 egg3 tablespoons mayonnaise4 teaspoons lemon juice1/8 teaspoon red pepper flakes1 teaspoon dried tarragon1 teaspoon dried tarragon1 tablespoon minced green onions8 ounces crabmeat 1/2 cup crushed buttery crackers 1/2 tablespoon butter 1/2 tablespoon olive oil

      1/8 teaspoon pepper1/8 teaspoon salt

      Directions:In a medium bowl, whisk together egg, mayonnaise, lemon juice, red pepper flakes, tarragon, and greenonions (scallions), salt and pepper. Gently stir in crabmeat, being careful not to break up meat.Gradually mix in cracker crumbs. You can add more or less crackers depending on the consistency youwould like.Heat butter and olive oil in a skillet over medium heat. Form crab mixture into 4 patties. Place patties inskillet, and cook until golden brown, about 5 to 6 minutes on each side.
